On February 15th, from 2 PM to 5 PM, Tap & Bottle North is hosting a dessert and beer pairing featuring two of our favorite local companies: Dragoon Brewing and Kim’s Confections.

Pairing Lineup

1. Amburana Barrel-Aged Stout
Marshmallow, Vanilla & Chocolate
Paired with a Spiced Rocky Road Brownie with nuts and toasted marshmallow.

This sweet stout showcases unique Amburana barrel character with strong notes of cinnamon, nutmeg, and lightly charred wood. Added marshmallow, vanilla, and chocolate bring layers of complexity, with flavors reminiscent of breakfast cereal and rich dark chocolate. The decadent rocky road brownie enhances the deep cocoa notes, while the toasted marshmallow adds a subtle smokiness that mirrors the barrel char.

2. Blood Orange Wheat
Paired with a Citrus Shortcake topped with mixed berries and roasted vanilla.

This bright and refreshing wheat beer highlights crisp blood orange flavors with a soft, wheaty mouthfeel. The berries add complementary tartness, while the shortcake and roasted vanilla provide a rich sweetness that balances the citrus beautifully.

3. Amber Ale
Paired with a Salted Caramel Apple Crumble.

Dragoon’s Amber Ale is an award-winning Scottish ale (2025 World Beer Cup Silver Medal) featuring aromas of nutty toffee, brown sugar, and dried figs, with a smooth semi-sweet finish. A light earthy hop bitterness keeps it balanced and refreshing. Kim’s salted caramel apple crumble enhances the caramel notes while adding sweet-tart apple flavors. A touch of salt brings all the flavors together.
